Condensed Milk Flan: A Creamy Delight

Instructions:

  1. Caramel Preparation: In a saucepan, gently spread out the granulated sugar. Over medium-low heat, let the sugar melt without stirring. This process requires patience. The sugar will slowly turn into a golden caramel. Avoid adding water or any other liquid. This can take around 10 to 15 minutes.
  2. Mold Preparation: Once the caramel is ready and has a lovely amber color, pour it carefully into your desired mold, ensuring an even coat at the bottom.
  3. Flan Mixture: In a mixing bowl, beat the eggs gently to break them up. Gradually add in the condensed milk, liquid milk, and vanilla essence. Mix well until the mixture is smooth.
  4. Pour and Prepare for Baking: Transfer the egg and milk mixture into the mold, over the caramel layer.
  5. Baking: If using one large mold, cover it with aluminum foil. Place the mold in a larger baking pan and fill the outer pan with water until it reaches halfway up the sides of the flan mold. This method, known as a water bath or “bain-marie,” ensures even cooking. Bake for approximately 1 1/2 hours in a preheated oven at 180°C (350°F). If using individual molds, they will typically need around 40 minutes.
  6. Cooling: After baking, remove the flan from the oven and allow it to cool to room temperature. For best results, refrigerate it for a few hours, allowing the flan to fully set.
  7. Serving: When ready to serve, invert the flan onto a serving dish. The beautiful caramel layer will now be on top, dripping down the sides of the creamy flan.

Tip: Flan is best enjoyed cold. The juxtaposition of the chilly, creamy custard with the rich, warm notes of caramel is pure bliss.
