Quick and Delicious Berliner Balls Recipe
Indulge in these delightful Berliner Balls filled with custard cream, an absolute treat for kids and adults alike during snack time.
Ingredients:
For the Dough:
- 250 gr of flour
- 60 gr of water
- 50 gr of milk
- 50 gr of butter
- 25 gr of sugar
- 1 whole egg + 1 yolk
- 1.5 teaspoons of dry yeast
- 1 teaspoon of salt
For the Custard Cream:
- 25 gr of butter
For Frying:
- 1 liter of neutral oil
- Sugar to sprinkle on the Berliner Balls
Instructions:
- Melt the butter in lukewarm milk and rehydrate the yeast in water for 5 minutes.
- Combine all the ingredients in a large bowl and knead.
- Knead for at least 10 minutes by hand or using a kitchen robot. Let it rise for 45 minutes covered with a cloth. Then, cover with cling film and refrigerate overnight. If you’re in a hurry, skip the refrigeration and let it rise until it doubles in size, around 1-2 hours.
- The next day, take the dough out of the fridge and let it sit at room temperature for 15 minutes. Roll it out to a thickness of about 1.5 cm.
- Cut out 7 cm diameter discs and place them on a floured surface. Cover with a clean floured cloth and let them rise for another hour.
- For the Custard Cream: While the dough discs are resting, prepare the custard cream.
- Add the butter to the hot custard cream, stirring until it’s fully melted and incorporated.
- Transfer the cream to a bowl, cover with cling film, and let it cool in the fridge.
Frying Instructions:
- Heat the oil to approximately 160°C.
- Fry 2 or 3 dough pieces at a time in the oil, turning them frequently. They should be cooked in about 5 minutes.
- Once fried, place them on paper towels to drain excess oil, then sprinkle them with sugar or a mixture of sugar and cinnamon.
- Allow them to cool to room temperature. Then, slit them open with a knife or scissors. Fill a piping bag with the custard cream and fill the Berliner Balls.
