- 200 grams of dough
- 1 ½ tsp of dry yeast
- ½ tsp of baking powder
- 9 ½ cups of wheat flour
- 3 tablespoons of salt

- Preheat the Oven:
Begin by preheating your oven to 230 degrees Celsius (446 degrees Fahrenheit). - Prepare the Starter Dough:
Start by preparing the famous starter dough (masa madre). In a bowl, combine the wheat flour, baking powder, water, and salt. Mix these ingredients well until you have a homogeneous mixture. Once mixed, cover it and let it rest. - Prepare the Main Dough:
With the remaining flour, form a well, and add salt around its rim and baking powder in the center. Mix this with water until it reaches a consistency similar to the starter dough. - Combine and Knead:
Add the starter dough to this mixture and knead until you obtain a dough that easily detaches from the hands. - Let the Dough Rise:
Place this dough in a previously greased bowl and allow it to rest for about half an hour. - Shape the Bolillos:
Start taking small portions of the dough to form the bolillos. For teleras, shape a small oval and flatten it, then form small lines on them. - Final Rest and Bake:
Let them rest again until their size increases. Once they have risen, bake them in the preheated oven for about 15 minutes until they are golden brown and crispy.
