Mexican Fiesta Casserole: Simple and Flavorful

Ingredients:

  • 1 pound of lean ground beef
  • 2 cups of salsa
  • 1 can (16 ounces) of drained chili beans
  • 3 cups of crushed tortilla chips
  • 2 cups of sour cream
  • 1 can (2 ounces) of drained sliced black olives
  • ½ cup of chopped green onion
  • ½ cup of chopped fresh tomato
  • 2 cups of shredded Cheddar cheese

Directions:

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium-high heat, cook and stir the lean ground beef until it’s browned and crumbly, which should take about 8 to 10 minutes.
  3. Stir in the salsa, reduce the heat, and simmer until the liquid is absorbed, which takes about 20 minutes. Stir in the drained chili beans and cook until they are heated through.
  4. Spread the crushed tortilla chips evenly over the bottom of the greased baking dish. Spoon the beef mixture on top of the chips.
  5. Next, spread the sour cream over the beef, and then sprinkle the drained black olives, chopped green onion, and chopped fresh tomato on top. Finish by covering everything with the shredded Cheddar cheese.
  6. Bake the dish in the preheated oven for about 30 minutes or until it’s hot and bubbly.
