Simple Blender Coconut Cake

Ingredients:
- 3 eggs
- 2 cups of wheat flour
- 1 cup of milk
- 2 cups of sugar
- 2 tablespoons of melted margarine
- 50 grams of grated coconut
- 1 tablespoon of baking powder
For the syrup:
- 200 ml of coconut milk
- 1 cup of sugar
- 50 grams of grated coconut
Instructions:
Preparing the cake:
- Combine all the cake ingredients in a blender and blend until a smooth mixture forms.
- Pour the batter into a greased baking dish.
- Bake in a preheated oven at a medium setting for about 40 minutes or until the top is golden brown.
Preparing the syrup:
- Combine all the syrup ingredients in a saucepan.
- Cook over medium heat, stirring continuously until it thickens slightly and becomes a bit viscous.
After baking the cake, pour the prepared syrup over it. Allow it to sit for a few minutes until the syrup firms up a bit.
Once done, your simple blender coconut cake is ready to be enjoyed!
