Vegan Chickpea Nuggets Recipe

Ingredients:
- 400g (2 1/2 cups) boiled chickpeas
- Smoked paprika

- Onion powder
- 15ml (1 tbsp) extra virgin olive oil
- 60g (1/2 cup) almond flour or coconut flour
- 2 tbsp nutritional yeast
- Salt and pepper, to taste
Preparation:
- Preheat Oven/Air Fryer: Begin by preheating your oven to 200°C (180°C fan). If you’re using an air fryer, set it to 200°C.
- Mash the Chickpeas: Transfer the boiled chickpeas to a large mixing bowl. Using a fork or potato masher, mash them until they are broken down.
- Add the Ingredients: Into the mashed chickpeas, add the smoked paprika, garlic powder, onion powder, extra virgin olive oil, almond or coconut flour, nutritional yeast, salt, and pepper. Mix everything well until combined.
- Shape the Nuggets: Using a teaspoon, scoop out some of the chickpea mixture and form it into nugget shapes using your hands.
- Arrange for Baking: Place your formed nuggets onto a baking sheet lined with parchment paper. If you’re using an air fryer, place them in the air fryer basket.
- Bake: If you’re baking in the oven, let them bake for about 15 minutes, making sure to flip them halfway to ensure even cooking. If you’re using an air fryer, they’ll need about 10 minutes, again flipping halfway.
