  4. Remove the frothy layer, take the figs out of the water, and set them aside.
  5. In the same pot, combine the liter of water, sugar, and lemon peel. Bring to a medium-high heat.
  6. Prick each fig with a fork and add them to the pot. Let them cook for 2 hours.
  7. After cooking, once the figs are tender, allow them to cool to room temperature.
  8. Transfer the cooled figs into sterilized glass jars (cleaned with soap and water, then boiled water) and seal tightly.
