Baked Denver Omelet: A Breakfast Game-Change

Ingredients:

  • 2 tablespoons of butter
  • ½ onion, finely chopped
  • ½ green bell pepper, finely chopped
  • 1 cup of diced cooked ham
  • 8 eggs
  • ¼ cup of milk
  • ½ cup of shredded Cheddar cheese
  • Salt and freshly ground black pepper to taste

Directions:

  1. Preheat your oven to 400 degrees F (200 degrees C). Grease a 10-inch round baking dish generously.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and green bell pepper, and cook and stir until they become softened, which should take about 5 minutes. Stir in the diced ham and continue cooking until it’s heated through, about 5 more minutes.
  3. In a large bowl, beat the eggs and mix in the milk. Stir in the shredded Cheddar cheese and the ham and vegetable mixture. Season the mixture with salt and freshly ground black pepper to your liking.
  4. Pour this egg mixture into the prepared baking dish.
  5. Bake in the preheated oven until the eggs are beautifully browned and puffy, which typically takes about 25 minutes.
