Easy Slow Cooker Honey Garlic Chicken – Dinner Ready When You Walk in the Door
Ingredients:
- 1/3 cup honey
- 1 tbsp garlic, minced
- 1/2 cup low-sodium soy sauce (see note)
- 1/4 cup ketchup
- 1 tsp dried oregano
- 2 pounds bone-in, skin-on chicken thighs
- 1 pound baby red potatoes
- 1 pound peeled carrots
- 1 cup chopped onions
- 1 pound trimmed green beans
- Fresh parsley (optional, for serving)
- Salt and pepper to taste
- 2 tsp cornstarch (optional)
- 3 tsp water (optional)
Instructions:
- In a small bowl, mix together honey, garlic, soy sauce, oregano, and ketchup. It’s the secret sauce that makes everything amazing!
- Place the chicken thighs, baby red potatoes, carrots, and chopped onions into your trusty 4-6 quart slow cooker.
- Pour that mouthwatering honey garlic sauce all over the goodies in the slow cooker. Make sure it’s evenly distributed for maximum flavor.
- Now, the hard part (just kidding, it’s super easy!)—cover your slow cooker and lock that lid. Set it to LOW for 6-8 hours or HIGH for 3-3 1/2 hours (see note for the magic!).
- Almost there! About 20 minutes before you’re ready to dive in, add those green beans to the mix. Want your sauce to be extra fantastic? Stir together that optional cornstarch slurry (cornstarch + water) and mix it in.
- Seal the deal with the lid again and let it work its magic for another 15-20 minutes until the green beans are tender, and the sauce is getting thick and irresistible.
- Get ready to be the dinner hero! Using a slotted spoon, plate that tender chicken and those perfectly cooked veggies. Want to take it to the next level? Broil the chicken thighs for 2-3 minutes to get that crispy, golden skin.
- The final touch of magic—drizzle that incredible sauce all over your masterpiece. Sprinkle some optional minced parsley on top to make it look as good as it tastes.
Dinner is served, and you didn’t even break a sweat! 😋🍽️
