Grandma’s Secret Apple Pie Recipe

Ingredients for Apple Pie:

  • 2 kg sweet-tart apples
  • 200 g sugar
  • 1 teaspoon cinnamon
  • Zest of 1 lemon
  • 60 g walnuts

For Flaky Pastry:

  • 500 g all-purpose flour
  • 250 g butter (or 100 g butter + 100 g lard)
  • 125 g powdered sugar
  • 2 packets vanilla sugar
  • 2 eggs + 2 egg yolks
  • 2 tablespoons sour cream
  • Lemon zest
  • A pinch of salt

For Brushing:

  • 1 egg yolk

Method:

  1. egin by mixing flour and butter in a bowl. Add the remaining ingredients and knead the dough until everything is well combined. Don’t over-knead the dough; it should remain tender after baking.
  2. Divide the dough into two portions, with one slightly larger for the bottom crust. Wrap them in plastic wrap and refrigerate for an hour.
  3. While the dough chills, prepare the filling. Wash and peel the apples, then grate them coarsely. Toast the walnuts in a pan for a short while, then chop them finely. Cook the apples with sugar and cinnamon in a saucepan over low heat until they become slightly caramelized. Finally, add the chopped nuts and lemon zest, stir, and set aside.
  4. Preheat your oven to 170 degrees Celsius (340 degrees Fahrenheit).
  5. Take the larger portion of dough from the fridge and roll it out directly onto a piece of parchment paper without using flour. Roll it out large enough to cover the bottom and sides of your baking dish. Transfer the dough, along with the parchment paper, into the baking dish, and prick it with a fork to prevent air bubbles during baking.
  6. Spread the apple filling evenly over the dough in the dish.
  7. Remove the smaller portion of dough from the fridge, roll it out on another piece of parchment paper, and use a rolling pin to lift and place it over the apple filling. Gently press it down to even out the surface and use a fork to make small holes in the top crust.
  8. Brush the top crust with a beaten egg yolk for a beautiful golden finish.
  9. Bake the apple pie at 170°C (340°F) for 50 minutes or until it’s golden brown and the filling is bubbling.
  10. Once it’s done, sprinkle some powdered sugar on top, then slice and serve your delicious homemade apple pie.
