Homemade Chinese Noodle Soup Recipe
If you know the secret seasonings, Chinese Noodle Soup is amazingly quick and easy to make! The Asian soup broth is so excellent you’d think it came from a Chinese restaurant. A large bowl takes 10 minutes and has only 352 calories. Use whichever noodles, vegetables, and protein you want – or don’t! It’s fantastic fridge foraging food.
Here’s a rundown of what happens:
Broth: Combine and cook 6 ingredients for 10 minutes (no need to go to the Asian store!).
Noodles: Cook fresh OR dried noodles according per package instructions.
Toppings: Dig through the fridge for your favorite vegetables and proteins. Chop coarsely and heat alongside the noodles or in the soup. soup; and
Place noodles in dishes to serve. Pour over soup and garnishes.
Ingredients
Broth
- 750 ml chicken stock/broth, low sodium
- 2 garlic cloves
- 1.5 cm / 1/2″ ginger piece, cut into 3 slices (optional, but highly recommended)
- 1 1/2 tbsp light soy sauce
- 2 tsp sugar
- 1 1/2 tbsp chinese cooking wine
- 1/4 – 1/2 tsp sesame oil
Toppings & Noodles
- 180g / 6oz fresh egg noodles
- 2 large bok choy or other vegetables of choice
- 1 cup shredded cooked chicken
- 1 scallion / shallot
Instructions
- In a saucepan over high heat, combine the Broth ingredients. Put on the lid, bring to a boil, then reduce to a medium heat for 8 to 10 minutes to allow the flavors to infuse.
- Meanwhile, prepare the noodles according to package guidelines.
- Bok choy should be cut in half (for small / medium) or quarters (for large). Thoroughly clean.
- Cook the bok choi in the soup broth OR noodle cooking water for 1 minute (if the noodles required boiling).
- Remove the garlic and ginger from the soup.
- Fill bowls with noodles. Serve with chicken and bok choy on top. Pour over soup and top with green onions. Excellent with chilli paste or fresh chillis.
