Homemade Quince Paste (Dulce de Membrillo)
Ingredients:
- Quinces
- Water
- Sugar
Instructions:
- Wash the Quinces:
Clean the quinces under running water, using a brush to remove all the fuzz completely. - Cut into Halves:
Cut the quinces into halves without peeling them first, and place them in a pot. - Cook in Water:
Fill the pot with enough water and cook on high heat. Once it starts boiling, simmer the quinces for approximately 20 minutes or until they soften. - Drain and Cool:
Remove the pot from heat and allow the quinces to drain for a few hours. - Clean the Quinces:
Using a spoon, remove the seeds and the core of the quinces. - Purée the Fruit:
Place the halved quinces in a food processor or blender and blend until smooth, no need to peel them. - Add Sugar:
Weigh the puréed quinces and place them in a pot with an equal amount of regular sugar. - Cook and Stir:
Cook over high heat, stirring continuously with a wooden spoon until the mixture begins to boil. - Reduce Heat and Continue Cooking:
Once boiling, reduce the heat to low and continue stirring for another 20 minutes. - Cool and Refrigerate:
Finally, remove the mixture from heat and pour it into a water-moistened loaf pan. Allow it to cool to room temperature for a few minutes, then cover with plastic wrap and refrigerate for 48 hours.
