Ingredients:
- 1 kg of figs
- 1 liter of water
- 700 grams of sugar
- Half a lemon peel
Preparation: Easy
Cook Time: 2h 15m (includes 2 hours of simmering)
Yields: One 3-liter jar
Instructions:
- Start by removing the stems from the figs. Thoroughly wash and drain them.
- In a large pot, combine the figs with enough water to cover them completely.
- Heat the mixture over medium-high heat until it comes to a boil. Continue boiling for a few minutes until the figs release a white sap, creating a frothy layer on the water’s surface.
- Remove the frothy layer, take the figs out of the water, and set them aside.
- In the same pot, combine the liter of water, sugar, and lemon peel. Bring to a medium-high heat.
- Prick each fig with a fork and add them to the pot. Let them cook for 2 hours.
- After cooking, once the figs are tender, allow them to cool to room temperature.
- Transfer the cooled figs into sterilized glass jars (cleaned with soap and water, then boiled water) and seal tightly.
Enjoy your dessert once it’s cooled!
Tips for Success:
- Choose ripe, fresh, and whole figs for this recipe to ensure the best quality dessert.
- It’s crucial to use very clean jars to prevent any issues with the preserves, ensuring they’re stored optimally. Labeling the jars with the cooking date is a good practice for tracking their preparation and storage. The preserves will last several days when stored properly.
- If you have extra syrup, it can be used for other desserts or to prepare more figs. This versatile ingredient can also be incorporated into tarts, enhancing their flavor.
