  • 70-80 gr Flour
  • Olive Oil

  • of a quarter lemon Grated peel
  • Salt
  • 1 tablespoon Olive Oil

Preparation:

  1. Wash and grate the zucchini with a vegetable grater.

  3. Place it in a strainer, add some sea salt, and set aside for about an hour. Then squeeze the zucchini once more and place it in a bowl.
  4. Wash the mint and dill and coarsely cut the leaves.
  5. Briefly whisk the eggs. In a mixing dish, combine the zucchini, herbs, lemon zest, salt, pepper, feta, and eggs. Stir in the flour a little. Use only enough flour to create a thick liquid mass.
  6. Heat the oil in a pan, preferably a greased pan, since they will stick together otherwise.
  7. Put the dough in little heaps in the hot oil with a spoon, press them down, and shape them with the spoon if necessary.
  8. Reduce the heat to prevent the Kolokithokeftedes from browning too soon.
  9. Fry them till golden brown on both sides, then remove them and layer them on kitchen paper.
  10. Combine the yoghurt dip, lemon peel, and olive oil in a mixing bowl and season with salt and pepper to taste.
