Ingredients:
- 300g of Tomatoes (1 can)
- 2 tablespoons of Olive Oil (30 ml)
- 1 clove of Garlic
- 1 teaspoon of Oregano
- 2 medium-sized Eggplants
- 1/4 cup of Parmesan Cheese (30 g)
- Mozzarella Cheese
- 1/2 cup of Milk (120 ml)
- 2 Eggs
- Flour
- 1 teaspoon of Dried Basil
- Breadcrumbs
Instructions:
- Prepare the Tomato Sauce:
In a medium-sized pan, heat the olive oil and add 1 crushed clove of garlic. Pour in the canned tomatoes and cook the sauce for 10 minutes. - Prepare the Eggplants:
Slice the eggplants and heat them in the microwave for 5-7 minutes on high, then leave them to cool down. - Prepare Egg Wash:
Beat the eggs and milk together. - Assemble the Cutlets:
Place a spoonful of sauce on top of an eggplant slice and add a slice of mozzarella cheese. Sprinkle some parmesan cheese and dried basil over it. Cover with another slice of eggplant. - Coat the Eggplant:
Dredge the eggplant in flour, dip in the egg wash, and then cover with breadcrumbs. Repeat the egg wash and breadcrumb coating once more. - Cooking:
Fry the eggplants in preheated oil for 4-5 minutes, until golden brown. Serve immediately.
