Method
- Soften the butter until it’s spreadable.
- In a mixing bowl, combine the flour with the softened butter.
- Stir in the ice water, salt, and sugar, mixing well until the dough comes together.
- Knead for a few minutes, then let it rest, covered with a kitchen towel, for 15 minutes.
- Divide the dough into four equal squares.
- Roll out each piece to approximately 30cm x 25cm.
- Spread softened butter over the rolled-out dough.
- Fold the dough in three, like a letter, and lightly flour.
- Roll out again, fold in three, and repeat the process two more times.
- Trim the edges to tidy up, then cut into 12 pieces.
- Make diagonal cuts in each piece.

- Brush the top with the egg wash.
