Ingredients:

  • 1 pig head (well washed)
  • 1 pig tongue
  • 2 pork legs

  • 1 chick nettle (or substitute with preferred herbs)
  • Salt to taste
  • A couple of garlic cloves
  • 4 cloves garlic for seasoning
  • 20 grams of black pepper grains
  • 5 grams of ground ají pepper
  • 10 grams of cummin

  • 2.8 kg of pork (additional to the parts mentioned)

Instructions:

Step 1: Boil the Ingredients
  • Place the pig head, tongue, and pork legs in a pressure cooker.
  • Add 1/4 of the pot with water, two onions, chick nettle, salt, and a couple of garlic cloves.
  • Cook under pressure for 50 minutes.
  • After cooking, allow it to cool.
Step 2: Separation and Chopping
  • Separate the meat from the bones, ensuring that all parts are effectively utilized.
  • Chop the meat into bite-sized pieces.
Step 3: Season the Meat
  • Season the chopped meat with 4 cloves of garlic, 20 grams of black pepper (half crushed and the other half left in grains), 5 grams of ground ají, 10 grams of cummin, 5 grams of nutmeg, and 10 grams of oregano.
  • Add a teaspoon of pepper tea and salt according to your taste.
Step 4: Slow Cook
  • Place all the cut and seasoned meat into a slow cooker.
  • Allow it to cook on very low heat for 10 minutes to absorb the seasoning. If available, use a bit of the liquid in which the head was boiled (strain it to ensure only the liquid is used).
Step 5: Chill and Set
  • Transfer the mixture into a container and allow it to cool.
  • Once cool, place it in the fridge for 12 hours to set and intensify the flavors.
Step 6: Present and Enjoy
